What does a kitchen steward do in Indonesia?
A kitchen steward, often called a dishwasher, keeps tableware, cookware and kitchen areas clean, dry and ready to use. In hotels, the stewarding team also sets up equipment for banquets and manages kitchen waste. Indonesia's hotel competency standard (SKKNI Hotel, Kepmenaker 125/2024) and catering standard (SKKNI Jasa Boga, Kepmenaker 107/2024) both include a unit on cleaning kitchen areas and equipment.

- Sort and dispose of kitchen waste and keep bins from attracting pests.
- Set up and count equipment for banquets or buffets, then clear it after the event.
- Report broken equipment, low stocks of cleaning products or signs of pests to a supervisor.
What do you need to work as a kitchen steward?
Kitchen stewards do not need a licence, and many vacancies accept applicants without experience. Ads usually ask for good health, the ability to stand for long periods and readiness for shift work. Because the work happens where food is prepared, stewards need to keep things clean; Indonesia's food safety competency standard (Kepmenaker 453/2025) even has a unit for people who work in food handling areas without handling food directly.
What does a typical kitchen steward job description look like?
Kitchen steward ads usually name the workplace (hotel, restaurant, caterer or central kitchen), the shift pattern, the employment status (daily, fixed-term or permanent) and duties such as washing equipment and keeping the kitchen clean. The description below is our own, written from common ad patterns; it is not a vacancy from any hotel or restaurant. A genuine ad names the business and its address and never asks for a fee.

How much do kitchen stewards earn in Indonesia?
Kitchen stewards must be paid at least the applicable minimum wage: the city or regency minimum (UMK), or the provincial minimum (UMP) where no UMK is set. Government Regulation (PP) 36/2021, Article 23, bans paying below it for workers with under one year of service. If you are paid by the day, Article 17 sets the daily wage as the monthly wage divided by 25 for a six-day week, or by 21 for a five-day week. Micro and small businesses are exempt.

Which education and career routes are open to kitchen stewards?
Kitchen stewards need no special education; a catering or hospitality vocational school (SMK) helps, as does training at a public training centre (BLK) or a private training institution. The usual ladder is steward, then stewarding supervisor, or a move to the cooking line as cook helper, commis and then cook. Units from the hotel and catering standards can be assessed by a BNSP-licensed certification body (LSP) to prove your skills.

Can Indonesians work as kitchen stewards or dishwashers abroad?
Yes, for example in a cruise ship galley, but only through official channels. Ship crew count as Indonesian migrant workers under Law 18/2017, Article 4; placement agencies (P3MI) placing merchant crew abroad must hold a SIP3MI licence (PP 22/2022, Article 8); and seafarers must complete basic safety training (PM 70/2013, Article 55). For Singapore, Indonesia is not a source country for services-sector Work Permits.
What rights do daily-paid kitchen stewards have?
Hotel and restaurant stewards are often hired as daily workers. Under PP 35/2021, Article 10, daily work agreements are only for work of fewer than 21 days a month, and if you work 21 days or more for three consecutive months your status becomes permanent by law. Article 11 requires the daily agreement to be in writing and to state at least the wage, and the employer must meet your rights, including social security.
Legal status: the Labour Protection Law was approved by the DPR and the Government on 6 October 2026 but has not been promulgated and its text is not public. Until it takes effect, the rules on this page apply.

How do you apply for a kitchen steward job safely?
Applying safely for a kitchen steward job means checking that the employer is real, that your employment status is in writing and that nobody asks you for money.
- Find the same vacancy on the hotel's or restaurant's official careers site, or on Karirhub.
- Ask from the start whether you are hired as a daily, fixed-term or permanent worker, then ask for a written agreement.
- Keep your own record of the days and hours you work, especially if you are paid by the day.
- For cruise ships or work abroad, make sure the agency is an active P3MI on SISKOP2MI and read the Panduan Warga passport guide before you apply for a passport.
- For work abroad, keep the rules in order: Law 18/2017, Article 30(1), states that Indonesian migrant workers cannot be charged placement costs; Ministerial Regulation P2MI 17/2025 makes the employer pay placement costs and allows only costs written and itemised in the Placement Agreement; any other request for money, in cash or to a personal account, is a red flag.

The interview is held in a hotel room, a private house or another closed place that is not an office, or the location keeps changing. An invitation to stay overnight, or any sexual demand, as a condition for being hired or for renewing a contract is also a warning sign.
What to do: Ask for the interview at the office or a public place, tell someone close to you where you are, and leave if you feel unsafe. Sexual demands can be reported to the police or the local manpower office (Disnaker). If you are in danger, call the police.

Which job scams target kitchen stewards and dishwashers?
Watch out for overseas dishwasher offers, for example to Singapore or on cruise ships, made through unlicensed agents who ask for fees. There are also fake free school meal (MBG) kitchen vacancies, including dishwashing staff, that ask for ID details through unofficial links, according to an RRI fact check in June 2026. At home, watch for unpaid trial shifts and requests to pay for uniforms.

How is a kitchen steward different from a cook or a cleaner?
A kitchen steward looks after kitchen equipment and cleanliness but does not cook; a cook prepares and cooks food. A cleaner keeps buildings or sites clean in general, and hotel housekeeping looks after guest rooms. Waiters serve guests in the dining room. In the free school meal programme's SPPG kitchens, washing equipment is often part of the kitchen worker's job. A cabin steward on a cruise ship does housekeeping work, not kitchen stewarding.

What does steward mean in a hotel or restaurant kitchen job ad?
In a kitchen job ad, a steward is the person who washes and looks after tableware and cookware and keeps the kitchen clean. A kitchen steward does not serve guests. The term is easily confused: a steward on a plane is cabin crew, and a stateroom steward on a cruise ship cleans guests' cabins. Read the duties in the ad so you know which job is really on offer.
Can an Indonesian dishwasher get a Work Permit for a restaurant in Singapore?
Not through a Work Permit. According to Singapore's Ministry of Manpower (MOM), services-sector Work Permits are only for workers from Malaysia, the People's Republic of China and North Asian sources, plus nine non-traditional source countries for certain jobs such as kitchen assistants. Indonesia is on neither list, according to MOM pages updated in September 2026. A Singapore dishwasher offer with a Work Permit for an Indonesian is a red flag.
Do daily-paid kitchen stewards have to be made permanent?
Yes, by law, once you work 21 days or more a month for three consecutive months (Government Regulation (PP) 35/2021, Article 10). Daily work agreements are only for work of fewer than 21 days a month; once that threshold is met, the daily agreement no longer applies and your employment becomes open-ended (permanent) by operation of law. Article 11 requires daily agreements to be in writing and to state the wage.
Can a kitchen steward become a cook?
Yes, and many cooks start in the kitchen as stewards. The usual path is steward, then kitchen helper or cook helper, then commis and cook. Indonesia's hotel competency standard (Kepmenaker 125/2024) includes units such as using basic cooking methods and following food safety procedures, which a BNSP-licensed certification body (LSP) can assess so you can prove your skills when you move up.
What should I watch for when using cleaning chemicals in a kitchen?
Use cleaning products at the dose and in the way the label says, wear the gloves or protective gear provided, and never mix different products. Store chemicals away from food. The hotel standard includes a unit on following occupational safety and health standards, and the food safety standard (Kepmenaker 453/2025) includes a unit on cleaning and sanitation.
Do kitchen stewards get overtime pay when a banquet runs late into the night?
Yes, if you work beyond normal working time: 7 hours a day on a six-day week or 8 hours a day on a five-day week, and 40 hours a week (PP 35/2021, Article 21). Article 27 requires overtime to be paid, except for certain job grades, and Article 28 requires an overtime order from the employer and your consent, in writing or digitally. Overtime is capped at 4 hours a day and 18 hours a week (Article 26). Note when each event starts and ends.
