What does a baker or pastry cook do in Indonesia?

A baker makes bread and yeast-raised goods, while a pastry cook makes cakes, pastries and desserts. The work covers weighing ingredients, mixing dough, managing fermentation, baking, decorating and keeping things clean. Indonesia's catering competency standard (SKKNI Jasa Boga, Kepmenaker 107/2024) includes units on managing a bakery and managing pastries and cakes, and the hotel standard (Kepmenaker 125/2024) includes preparing bread products for a cake shop.

  • Weigh ingredients to the recipe and make bread, cake or pastry dough by hand or with a mixer.
  • Manage proofing of yeast doughs to the right time and temperature.

What do you need to work as a baker or pastry cook?

Bakers do not need a licence. Ads usually ask for senior high or vocational school (SMA/SMK), ideally a catering major, care with recipes and readiness for early shifts. Because you handle food, hygiene rules apply: for restaurants, the annex to Minister of Health Regulation 2/2023 requires food handlers to be healthy, to have a health check at least once a year and to hold a ready-to-eat food safety training certificate.

What does a typical baker or pastry cook job description look like?

Baker ads usually name the workplace (bakery, hotel, cafe or central kitchen), the products, the shift start time and the daily production target. The description below is our own, written from common ad patterns; it is not a vacancy from any bakery or hotel. A genuine ad names the business and its address and does not require you to buy equipment or pay for training to be hired.

How much do bakers and pastry cooks earn in Indonesia?

Bakers must be paid at least the applicable minimum wage: the city or regency minimum (UMK), or the provincial minimum (UMP) where no UMK is set. Government Regulation (PP) 36/2021, Article 23, bans paying below it for workers with under one year of service (Article 24). Bakeries that are micro or small businesses are exempt and set pay by agreement (Article 36). We do not show a baker-specific figure yet because no data meets our standards.

Which education routes lead to baker and pastry cook jobs?

Common routes into baking are a catering vocational school (SMK), a course at an accredited training institution, training at a public training centre (BLK or BPVP), or learning on the job as a bakery helper. For central kitchens and bread factories, the food industry standard (SKKNI Industri Pangan, Kepmenaker 28/2019) includes operating mixers, dough-moulding machines and ovens. These units can be assessed by a BNSP-licensed certification body (LSP).

Can Indonesian bakers work abroad?

Bakers can go to Japan through the Specified Skilled Worker (SSW) food and beverage manufacturing field, which the Immigration Services Agency of Japan page dated 4 September 2026 describes as making and processing food and drink other than alcoholic beverages. Its guideline also covers bakeries and confectioners that make their own products. You need the skills test and Japanese at about JLPT N4. Leave only through a licensed P3MI or KP2MI.

How is a hotel pastry cook different from a bakery baker?

A hotel pastry cook works in the pastry section of a hotel kitchen, preparing breads, cakes and desserts for restaurants, buffets and banquets. The hotel standard (Kepmenaker 125/2024) includes units such as gateaux, torten and entremets, petits fours, sugar work and sweet buffet displays. A baker in a bakery or central kitchen mostly produces in volume, to daily targets and on early-morning shifts.

What are the hours and rights of bakers who start before dawn?

Many bakeries and central kitchens start production before dawn. Under PP 35/2021, normal working time is 40 hours a week (Article 21), overtime is capped at 4 hours a day and 18 hours a week (Article 26), and overtime must be paid (Article 27). Law 13/2003, Article 76, requires transport for women who travel to and from work between 23.00 and 05.00. Employers must also register you with BPJS.

Legal status: the Labour Protection Law was approved by the DPR and the Government on 6 October 2026 but has not been promulgated and its text is not public. Until it takes effect, the rules on this page apply.

How do you apply for a baker job safely?

Applying safely for a baker job means checking that the business is real, that any course you take is accredited and that nobody asks for money to get you hired.

  1. Find the same vacancy on the business's official careers site or on Karirhub.
  2. Keep course fees separate from job promises: check the training institution's accreditation on Skillhub before you pay.
  3. Ask about the shift start time, days off and how overtime is calculated before you sign.

  • You are asked to pay for a test, a psychological test, a medical check-up, training or a uniform, or to book tickets and a hotel through an appointed agent with a promise of reimbursement.

    What to do: Do not transfer anything. The Ministry of Manpower says legitimate recruitment does not charge applicants.

  • The interview is held in a hotel room, a private house or another closed place that is not an office, or the location keeps changing. An invitation to stay overnight, or any sexual demand, as a condition for being hired or for renewing a contract is also a warning sign.

    What to do: Ask for the interview at the office or a public place, tell someone close to you where you are, and leave if you feel unsafe. Sexual demands can be reported to the police or the local manpower office (Disnaker). If you are in danger, call the police.

  • You are asked for a photo of your KTP or family card, a selfie holding your ID, your bank account number, an OTP code, a PIN or a password before any written job offer.

    What to do: Do not send them. OJK says never to give an OTP, PIN or password to anyone, and identity data can be misused for illegal online loans.

  • The interview invitation arrives as an app file (APK) or a link that asks you to install an app.

    What to do: Do not open it. OJK and Kominfo warn that fake APK files can read SMS messages with OTP codes and then drain bank accounts.

  • After the interview you are asked to hand over your original diploma or other original personal documents as a guarantee for the job.

    What to do: Ministry of Manpower Circular M/5/HK.04.00/V/2025 bars employers from requiring or holding original diplomas and personal documents as a guarantee for the job. The only exception is a diploma or competency certificate from education or training paid for by the employer under a written employment agreement, and the employer must keep it safe and compensate you if it is damaged or lost. Otherwise, show them for checking, then take them home.

Which job scams target bakers and pastry cooks?

The risk of job scams for bakers is relatively low, but it exists. Watch for paid baking courses that promise you a job, recruiters who ask for training or uniform fees, and overseas bread-factory offers through unlicensed agents. For Japan, SSW rules ban security deposits, and the food service field has not accepted new certificates of eligibility since 13 April 2026.

What is the difference between a baker and a cook?

Bakers and pastry cooks focus on dough, fermentation and baking: bread, cakes, pastries and desserts. Cooks prepare dishes in the hot kitchen such as stir-fries, soups and mains. The international classification ISCO-08 also separates them: bakers and pastry cooks (7512) sit with food processing trades, while cooks (5120) sit with service workers. Many hotel kitchens have their own pastry section.

Can a baking course guarantee me a job?

No course can promise that you will be hired. Before you pay, check whether the institution is accredited through the training institution (LPK) accreditation service on the Ministry of Manpower's Skillhub, ask what you will learn and which certificate you will get, and whether it is assessed by a BNSP-licensed certification body (LSP). The ministry says a fee in recruitment is almost certainly fraud, so keep course fees separate from job promises.

Can bakers work in Japan through the SSW programme?

Yes, through the food and beverage manufacturing field, not the food service field. The field's official guideline, last amended on 28 August 2026, includes food factories and bakeries and confectioners that make their own products. You need to pass the field's skills test and Japanese at JFT-Basic A2.2 or JLPT N4. New certificates of eligibility for the food service field have been suspended since 13 April 2026.

Can Indonesian bakers get a Work Permit in Singapore?

It is difficult. According to Singapore's Ministry of Manpower, manufacturing and services Work Permits are only for workers from Malaysia, the People's Republic of China and North Asian sources, plus nine non-traditional source countries for certain jobs. Indonesia is not on that list, and the non-traditional sources occupation list excludes bakers, pastry cooks and confectionery makers.

Do I have to pay placement fees to work in a bakery or food factory abroad?

Law 18/2017, Article 30(1), states that Indonesian migrant workers cannot be charged placement costs. Ministerial Regulation P2MI 17/2025 makes the employer pay placement costs by default, and you may be charged only costs written and itemised in the Placement Agreement (Perjanjian Penempatan). Any request for money outside that document, in cash or to a personal account, is a red flag. Japan's SSW rules also ban security deposits.

Which certificates help bakers and pastry cooks in Indonesia?

A competency certificate from a BNSP-licensed certification body (LSP) based on the catering or hotel standard proves your bakery and pastry skills. For restaurants, the annex to Minister of Health Regulation 2/2023 requires food handlers to hold a ready-to-eat food safety training certificate and to have a health check at least once a year. For Japan, there is a dedicated skills test for food and beverage manufacturing.
